Seems like another Iron Butt ride. If it were me I'd take 40 both ways with the following exception:

From CA take I-10 to Tucson and canyon ride to I-40 (4 -5 hour drive max) back onto 40 then head east. I-10 is an ugly stretch of road and TEXAS is a Looooong ride. I-40 will take you thru AZ, NM, TX, OK and into AK. This will break the monotony of being in one state endlessly.

Do a Google of AZ nice canyons on the eastern...
